I'm not a recipe writer, so I apologize for any hard to follow instructions.
Chicken and Cauliflower Quinoa
(for a two servings)
1 or 2 chicken breasts cut into small pieces
Lawry's Garlic and Herb marinade
1/2 head of cauliflower cut into small/medium pieces
1 C. rinsed Quinoa
Place cut up chicken in a ziplock bag with enough marinade to cover chicken. Remove as much air from the bag as possible, seal, and place in the fridge for at least 30 minutes.
Cook the quinoa as per the instructions on the box.
Steam cauliflower pieces in the microwave. (I just put them in a bowl, placed a wet paper towel over the bowl, and microwaved for about 3 minutes.)
In a hot pan, add chicken and brown both sides. Add cauliflower pieces and some more marinade to keep the contents of the pan moist while the chicken finishes cooking and to flavor the cauliflower.
Serve finished chicken/cauliflower mixture over a bed of quinoa!
